27. NICARAGUA LAS MORENTAS

Description:
Cherries are picked when fully ripe, and packed in to boxes on the farm to protect from damage.

Fermented overnight in the boxes, cherries are then taken to the nearby dry mill, Beneficio Las Nubes.

The beneficio is in Matagalpa, which has much less rainfall so is better suited for sun-drying.

Here they are spread on raised beds, with thickness of the layer increasing as the cherries dry.

This takes around 40 days. There are up to three layers of shade netting used to allow precise control.

Hourly raking allows for a fastidious control, and any skin breakages during this time are removed from the microlot.

After resting, beans are dry milled and bagged for export on site.
