Description
Ripe cherries are handpicked and sorted to remove underripe or damaged fruit.
The outer pulp is removed using mechanical depulpers soon after harvest. Beans undergo fermentation in tanks to break down mucilage, typically for 12–24 hours.
After fermentation, beans are thoroughly washed with clean water to remove remaining residues.
The coffee is then dried on patios or raised beds until it reaches the desired moisture level.
